Cultura culinaria desde la raíz que huye de los gastroespectáculos vacuos y gratuitos. Este libro pretende dignificar y honrar. Devolver a la comida algo de su fugacidad, respetar la esencia natural de las cosas, sentir antes que acumular. Hacer bella la cotidianeidad de nuestros campesinos, nuestros pescadores, nuestros artesanos, nuestra cultura gastronómica colombiana. Reivindicar todas esas realidades, tan alejadas de las urbes, y acercárselas al colombiano, a los jóvenes, a las nuevas generaciones. Los cuatro libros el estuche han sido organizados por alturas. This book seeks to honor and dignify. To give back to food something of its transience, to respect the natural essence of things, to feel before accumulating. To find beauty in the everyday lives of our farmers, our fishermen, our artisans—in our Colombian food culture. It reclaims those realities so distant from the cities and brings them closer to Colombians, to the youth, to new generations.
The four volumes in this collection are organized by altitudes—
a natural reflection of our geography, culture, and biodiversity.
From the shores of the Caribbean and the mangroves of the Pacific
to the páramos of frailejones and eternal snows;
from the Guajira deserts that end in seas and salt flats
